What is Codex?

Codex is the international food standards-setting organization founded by the United Nations’ Food and Agriculture Organization (FAO) and World Health Organization (WHO). Codex is charged with protecting consumer health and ensuring fair practices in food trade. The Codex Alimentarius, or “Food Code,” is the collection of Codex standards, guidelines and codes of practice.
